This was like a cross between a brownie, fudge, and ice cream. Freshly baked chocolate cake pieces… soft desiccated coconut… a creamy fudge base… put into the freezer and turned into… soft chocolate ice cream fudge with brownie chunks and a hint of coconut. Oh my god.
Winged it from beginning to end so I´m sorry I can just tell you what went in, and not the quantities. But it was so very delicious I just wanted to share it. And also show you how easy it can be to make something without a recipe. Some of this, some of that, a little more of this, and always taste in between 🙂 if you are cooking. Or baking. Or making sweets. Always taste. Mandatory.
And because I felt like it – the daily mofo favs will be all sweet today! 🙂

Brownie Ice Cream Fudge
- cocoa powder
- carobe powder
- agave
- hazelnut pulp (leftover from making hazelnut milk)
- about 1 tsp desiccated coconut
- water
Mixed until combined, then baked at 150°C. Bake until surface breaks, and its dry to the touch (about 1h). Then add…
- cream of coconut
- vegan cream
- more cocoa powder
- 1 cup desiccated coconut (homemade from fresh coconut)
- agave to taste
Mix it all together, then pour into a dish (I used a cake pan) and freeze. Make sure to cover the dish in clingfilm, otherwise it will stick.

Diese Schokoquadrate waren wie eine Mischung von einem Brownie und Eiscreme. Frisch gebackene Schokokuchenstückchen… weiche Kokosraspeln… wie eine cremige Pralinenmasse… und im Tiefkühler verwandelte es sich in… weiche Schokoladeneis-Trüffel mit Browniestückchen und einem Hauch Kokos. Oh mein Gott.
Und ich habe von Anfang bis Ende improvisiert, also kann ich leider nur sagen, was drin ist – und nicht die genauen Mengen. Aber es war soooo lecker, dass ich es einfach mit euch teilen wollte. Und auch, weil ich zeigen wollte, wie einfach es ist, etwas ohne Rezept zu machen. Etwas hiervon, etwas davon, und immer zwischendurch kosten 🙂 Beim Backen. Beim Kochen. Beim Pralinen herstellen. Immer zwischendurch kosten. Obligatorisch 😉
Und weil mir danach war, sind die heutigen Mofo-Favoriten alle süß! 🙂

Brownie-Eiscreme-Happen
- Kakaopulver
- Carobpulver
- Agavensirup
- Haselnusspaste (übrig von selbstgemachter Haselnussmilch)
- ca. 1 TL Kokosraspeln
- Water
Gut vermischen, dann bei 150°C backen. Wenn die Oberfläche Risse bekommt und es sich trocken anfühlt, ist es fertig. Dann Folgendes hinzufügen…
- Cream of coconut
- vegane Sahne
- Kakaopulver
- 1 cup Kokosraspeln (selbstgemacht aus frischer Kokosnuss)
- Agavensirup nach Geschmack
Alles vermischen, dann in eine Backform geben, die vorher mit Frischhaltefolie bekleidet wurde (sonst bleibt es hängen). Ich habe eine Kuchenform genommen.
