Vegan Mofo Day 14 – Tomato Quinoa, Hummus & Mushrooms | Tomatenquinoa mit Hummus & Pilzen

This meal may just be my fav combination of flavours. Tomatoes, quinoa, hummus, and fried mushrooms. Incredibly flavourful, and just sooo good. Push that old “Where do vegans get their protein?” from the table.🙂

Tomato quinoa with hummus & mushrooms

  • 1/2 cup quinoa
  • 1 cup water
  • salt to taste
  • handful mushrooms
  • 1 tomato
  • 2 tbsp paprika paste (or less, it was quite flavourful)
  • 1 tbsp tomato paste
  • black pepper

Hummus

  • 1 jar cooked chickpeas
  • about 1/3 cup olive oil
  • salt to taste
  • 1 clove of garlic
  • some lemon juice
  • 1 tbsp tahini

Bring quinoa and water to a boil. Put on the lid, turn down heat and let simmer. Cut mushrooms. Fry with some olive oil and salt to taste. Cut tomato. When quinoa has cooked, add tomato, black pepper, tomato and paprika paste to taste. Blend the rest of the ingredients to make hummus (adjust salt to taste).

Dieses Essen kombiniert meine liebsten Geschmacksrichtungen. Tomaten, Quinoa, Hummus und gebratene Pilze. Sehr aromatisch und sooo lecker. Um das altbekannte “Wo kriegen Veganer ihr Protein?” endgültig vom Tisch zu schieben🙂

Tomaten-Quinoa mit Hummus & Pilzen

  • 1/2 cup Quinoa
  • 1 cup Wasser
  • Salz nach Geschmack
  • Handvoll Champignons
  • 1 Tomate
  • 2 EL Paprikamark (oder weniger, es war recht würzig)
  • 1 EL Tomatenmark
  • Pfeffer

Hummus

  • 1 Glas gekochte Kichererbsen
  • Olivenöl (1/3 cup etwa)
  • Salz nach Geschmack
  • 1 Knoblauchzehe
  • etwas Zitronensaft
  • 1 TL Tahin

Quinoa und Wasser zum Kochen bringen. Deckel drauf, Hitze niedrig, köcheln lassen. Champignons kleinschneiden. Mit etwas Olivenöl und Salz nach Geschmack anbraten.
Tomate kleinschneiden. Wenn Quinoa fertig gekocht ist, Pfeffer, Tomaten, Paprika- und Tomatenmark dazu. Für Hummus: restliche Zutaten pürieren (Salz nach Geschmack anpassen).
