Vegan Mofo Day 12 – Rice & Red Cabbage | Reis & Rotkraut

Today I´ve got a simple but oh so delicious meal for you. Basmati rice with homemade braised red cabbage. And some hot sauce too, if you like. Easy and yummy. Just how I like it.

Basmati rice & Braised red cabbage

  • 100g vegan butter (or less)
  • 4 onions
  • 1 red cabbage
  • 1 cup herb vinegar
  • 2-3 tbsp veggie stock (or salt to taste)
  • 3 cups water (depends on amount of red cabbage)
  • 3 tbsp sugar

Cut onions and fry with the butter (in the pot). Cut red cabbage into shreds. Add cabbage and everything else to the pot (adjust salt to taste), lid on top, and let simmer. Mine took 1,5 hours. (you can do more or less depending on desired consistency).

  • 1 cup basmati rice
  • 2 cups Wasser
  • salt to taste

Put in a pot and bring to a boil. Do not stir! When it cooks, turn down heat, put on the lid and let simmer, until the water has evaporated.

Heute habe ich ein einfaches aber superleckeres Essen für euch. Basmatireis mit selbstgemachtem Rotkraut. Und Chilisauce drauf, wenn ihr mögt. Unkompliziert und lecker. So mag ich das.

Basmatireis & Rotkraut

  • 100g vegane Butter (weniger geht auch, 50g)
  • 4 Zwiebeln
  • 1 Kopf Rotkraut
  • 1 cup Kräuteressig
  • 2-3 EL Brühepulver (oder Salz)
  • 3 cups Wasser (anpassen nach Menge des Rotkrauts)
  • 3 EL Zucker

Zwiebeln kleinschneiden und mit der Butter im Topf glasig schwitzen. Rotkraut kleinschneiden und dazu. Rest in den Topf (Salz nach Geschmack), Deckel drauf und köcheln lassen. Meins dauerte 1,5h. (oder mehr/weniger, je nach gewünschter Konsistenz)

  • 1 cup Basmatireis
  • 2 cup Wasser
  • Salz nach Geschmack

Zum Kochen bringen. Nicht rühren! Hitze runterstellen, Deckel drauf und ziehen lassen, bis das Wasser verkocht ist.
