Vegan Mofo Day 8 – Potato Waffles&Hummus | Kartoffelwaffeln&Hummus

It all started with this post. She makes potato waffles. Out of 100% potato. Super simple. And quick. And they taste amazing. Why didn´t I think of this?

Anyway, I had to try. And because everything´s better with sauce, I made a hummus sauce to accompany these potato waffles. Worked perfectly.

Potato Waffles & Hummus Sauce – after this recipe

Hummus

  • 1 jar cooked chickpeas
  • olive oil (about 1/3 cup)
  • salt to taste
  • 1 orange chili pepper (with seeds and all)
  • 2 garlic cloves (or just 1)
  • some lemon juice
  • 1 tsp tahini
  • rice milk (optional, just to make it more “saucey”. water works, too)

Waffles

  • cooked potatoes
  • oil or vegan butter to grease the waffle pan

These waffles are a great way to use up leftover cooked potatoes. Otherwise just cook them like you usually do. Grease the waffle iron (I used vegan butter). Put in a potato, and fry until crispy. In the meantime, put everything into a blender to make the hummus. Adjust salt/spices to taste. Dig in🙂

Alles begann mit diesem Post. Sie macht Kartoffelwaffeln. Aus 100% Kartoffeln. Supereinfach. Und schnell. Und sie schmecken toll. Warum bin ich da nicht drauf gekommen?

Naja, ich musste sie jedenfalls probieren. Und weil Sauce alles besser macht, gabs noch eine Hummus-Sauce zu den Kartoffelwaffeln. Passte prima.

Kartoffelwaffeln & Hummus-Sauce – nach diesem Rezept

Hummus

  • 1 Glas gekochte Kichererbsen
  • Olivenöl (1/3 cup etwa)
  • Salz nach Geschmack
  • 1 orange Chilischote (komplett mit Samen)
  • 2 Knoblauchzehen (1 geht auch)
  • etwas Zitronensaft
  • 1 TL Tahin
  • Reismilch (optional, um es flüssiger zu machen. Wasser geht auch)

Waffeln

  • gekochte Kartoffeln
  • Öl oder vegane Butter zum Einfetten des Waffeleisens

Mit diesen Waffeln kann man prima übriggebliebene Kartoffeln verwerten. Oder einfach wie üblich kochen. Waffeleisen einfetten (ich habe Alsan genommen). Kartoffel rein, und braten bis knusprig. In der Zwischenzeit die restlichen Zutaten in den Mixer um das (den?) Hummus zu machen. Gewürze nach Geschmack anpassen. Schmecken lassen🙂
