I know, pancake day is over. But I finally managed to successfully make pancakes – for the first time since going vegan 🙂 so today is my personal pancake day. Cute puffy pancakes. Vegan and gluten-free. Topped with fresh plums… dripping with maple syrup… …and fluffy on the inside… so very delicious. Or beautifully messy and filled with blueberries. Your choice 🙂

The recipe is not mine, though. I went by this one. Feel free to add some fruit… blueberries, apples, you decide 🙂

Buckwheat rice flour pancakes (vegan&glutenfree)

  • 1/2 cup buckwheat flour
  • 1/4 cup brown rice flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • 3/4 cup + 2 tbsp rice milk
  • 2 tbsp pure maple syrup
  • 1 tsp pure vanilla extract

optional: blueberries, diced banana, apple, …

Pre-heat a skillet (I used a flat cast-iron pan). In a bowl combine the dry ingredients – buckwheat flour, rice flour, cornstarch and baking powder – and stir until combined. Add the rice milk, maple syrup and vanilla extract, and whisk until no clumps remain (if using apple or banana, add it in now). Lightly grease the pan (you know it is hot when you put in a drop of water and it sizzles). Use a ladle to pour the batter into the pan (if using frozen blueberries, add them now). When bubbles start to appear, flip it, and cook the other side. Repeat for the other pancakes. Top with fresh fruit, lemon juice+sugar, maple syrup… or whatever you have on hand. Enjoy 🙂

You don´t have to use fruit in the pancakes, but they taste a lot better, and look pretty, too 🙂


Vegane Eierkuchen! Es ist nicht mein Rezept, sondern dieses (englisch). Wenn du Obst da hast… Heidelbeeren, Banane, Apfel… passt alles gut dazu 🙂

Buchweizen-Reismehl-Eierkuchen (vegan&glutenfrei)

  • 1/2 cup Buchweizenmehl
  • 1/4 cup braunes Reismehl
  • 1 EL Stärke
  • 1 TL Backpulver
  • 3/4 cup + 2 EL Reismilch
  • 2 EL Ahornsirup
  • 1 TL Vanilleextrakt

optional: Heidelbeeren, kleingeschnitte Banane, Apfel,…

Heize eine Pfanne vor. Vermische die trockenen Zutaten in einer Schüssel: Buchweizenmehl, Reismehl, Stärke und Backpulver. Füge Reismilch, Ahornsirup und Vanilleextrakt hinzu und vermische alles, bis keine Klümpchen mehr sind (wenn du Obst verwendest, kannst du es jetzt hinzufügen). Fette die Pfanne (sie ist heiß genug, wenn ein Tropfen Wasser darin knistert). Nimm eine Kelle und gieße den Teig in die Pfanne (gefrorene Heidelbeeren kann man jetzt hinzufügen). Wenn sich Bläschen bilden, wende den Eierkuchen und brate die andere Seite. Wiederhole für die restlichen Eierkuchen. Dekoriere die fertigen Eierkuchen mit frischem Obst, Zitronensaft+Zucker, Ahornsirup… oder was gerade da ist. Guten Appetit 🙂
